Food Adventures #1 - Pan-fried Fish and Caribbean Rice & Beans

I thought it'd be fun to try and do a few adventures in food this summer.  This time is . . . Fish and Rice & Beans!  Here's some of the process:

Here's the setup for the fish!  Egg, cornmeal, then into the oil!  I actually double-coated them because the first coat was kinda weak...


Here's the rice and beans.  Quite a lot of flavor in that pot, but not as much as if we had added jalapenos.  I kinda chickened out on that part...

Aaaand, the plate!  All that liquid in the rice and beans cooked down to deliciousness; the fish looked good too.

The verdict: Overall, a winner!  Everything turned out well and looked pretty good too!

For next time: Less salt in the coating for the fish, and add the jalapenos to the rice & beans for stronger flavor.  Maybe find a vegetable that goes better than salad.

Hopefully all our food adventures turn out at least as well as this one!
